Let's leave North Africa and travel west through the Middle East to reach China. This week I would like to share some Asian classics and my own creations of Oriental food. Rice is a staple food in Southeast Asia and Chinese cuisines. Low-carbers don't eat the rice that is often served with Asian food. Some clever genius came up with cauliflower rice, also known as Cauli-rice. It is not known who first offered this "mock-rice" dish, but it is now a common staple in low-carb kitchens all over the globe. It is even available pre-frozen by commercial food distributors! Low-carb Asian cuisines are not to be avoided!
Low-carbers often complain that they can't get riced cauliflower to turn out as they want. It was a difficult dish to cook at first. It has been tried over water but it tends to make it soggy and overcook it. It's been tried in many ways, including in a skillet. But I prefer to cook it in oil. I prefer to prepare it in my microwave. Who'da thunk? It always comes out perfectly every time, I can tell you that! Here's how it works:
INGREDIENTS:
1 large head cauliflower (about 6 1/2 -7'' in diameter)
DIRECTIONS Take the leaves off and use a large, heavy knife to cut the stalks. Put them in a food processor. Pulse 8-9 times, or until the flowerets are reduced to small "pellet-like" pieces. The stalks are not as easy to chop, so I don't use them. If you do use them, I would first process them in my food processor. I then blend the stalks with a few pulses. I then eat them while I cook dinner. Raw cauliflower is my favorite thing.
Place the riced cauliflower in a large bowl. DO NOT ADD WATER! Cover the bowl with a microwave dome, loose-fitting plate or microwaveable paper plate. Microwave on High for 3 minutes. Stir well after each minute. It is important to stir! Taste, then add the cauli-rice to the microwave. Cook for an additional minute if necessary. You can use the cauli-rice uncooked if you are making a casserole. Use the cooked meat mixture in a wetter recipe like jambalaya, etouffee or gumbo. Stir the cooked cauli rice into the cooked meat mixture and then serve immediately. As it is more appealing on the plate, I like to place the cooked meat mixture on top the cauli rice when serving guests.
NUTRITIONAL INFORMATION: Each serving contains approximately 6 cups of cauli rice. There are a few variables to consider: how large your cauliflower head is, and whether or not you have risottoed the stalks. Each serving contains approximately:

The most important thing when following a vegan keto is to watch your macronutrient balance, which requires monitoring the number of carbohydrates, proteins, and fats in each meal. Protein should be reduced, while fat should be increased. You want to decrease the amount of carbohydrates you consume to get your body to a healthy metabolic state, known as nutritional ketosis. This will enable your body use fat as an energy source instead of glucose.
Calculating macros and monitoring carbohydrate consumption are just two of the many things you should be doing. You also need to consider nutrient-dense whole foods like nuts and seeds, avocados and leafy greens as well as healthy unsaturated oils such olive oil and coconut. A vegan ketogenic diet should include vitamin B12 supplementation. This is because many people don't have enough of the essential vitamins and minerals they need.
By learning about plant-based options (like tempeh or tofu) that are naturally low in carbs but packed with protein and heart-healthy fats, then adding some strategic supplementation sprinkled with macro counting, you can easily hit your nutrient ratios for success on a vegetarian keto diet!

Rather than tracking every detail of your macros, a lazy keto diet focuses on reducing net carbohydrate intake to 25-50 grams daily to enter and stay in a state of ketosis. This approach is less restrictive than traditional keto diets as it doesn't require you to keep an eye on your macronutrient ratio or caloric intake.
In essence, with a lazy ketogenic diet, you forgo tracking macros and opt for whole low-carb foods that you love most - things like meats, eggs, dairy products, nuts, seeds, and some vegetables are encouraged in moderate amounts while avoiding starchy carbohydrates and added sugars all together.
